If the root cause was subtitle burnin taking too long, the video wouldn't even start at all. From your description, the video does start but the subtitles fail to load. To me this sounds like on-the-fly extraction of embedded subtitles is failing or taking too long.
This can be caused by slow storage. You can try the "Subtitle Extract" plugin, which will pre-extract your embedded subtitles (this runs on a scheduled job).
