I have done exactly this.
My setup:
32TB media server
Mini computer-4core, 12G RAM
100/40mbit fibre connection
I use the mini computer solely to run Jellyfin server and Tailscale, which is designed as a personal VPN.
I have Jellyfin clients on my phone and iPad, on both our home TVs using the Google Chromecast Jellyfin app. My daughter lives about 150km away and uses the iPhone app. My brother lives several klm away and has a smart tv with the Jellyfin app and the Tailscale app. I’ve streamed from our house to New Zealand and the USA successfully.
Assuming you have a compatible phone, I would try connecting with that first. Make sure you have Tailscale running on the computer that runs Jellyfin server. You’ll need to read up on how it works. Then install the Jellyfin app and the Tailscale app on your phone. Once you’ve done that and followed the instructions on how to set up a Tailscale VPN you should be able to connect your phone with the Jellyfin app to your server.
You’ll also need to make sure your computer running the server has a fixed IP address, if it changes every time you restart the computer it won’t work.
