I have a Minisforum NAB6 Lite running Proxmox. Jellyfin is in a Docker container (with other containers being hosted) in a Proxmox VM with 8 cores and 8GB of RAM. My videos are mounted on a NAS, but it shouldn't have an impact, as they are both linked with 1Gbps.
I would probably like to transcode once and be done (probably in MKV since it seems to not screw up metadata), instead of relying on Jellyfin having to do it every time. The source files are pretty large, and they are starting to take up my available storage.
