I figured out the issue was because of permission issues, and after I elevated privileges to root (pid and gid set to 0), AV1 transcode worked. Now I have to figure out how to set the correct permissions for it to work in non-root mode... (any tips or help on perm issues?)
Oh and also in the new log, I see the following warning text:
