I tried with jellyfin/jellyfin image and the problem is still here.
Unfortunately this issue must be here for a while...

It's a shame that it works on Plex but not on Jellyfin

EDIT/update:
I did try another external player (Just Player), but I didn’t try the internal Zidoo player (used by HomeTheater4 / Google Video Player or something like that, I don’t remember exactly). With this player, it works—I get the 5.1 sound!
There’s just one small annoyance: when I stop playback, I get a 'Mark as watched' message where I need to choose whether or not the file should be marked as watched. (I don't have this when I use Home Theatre 4)
Overall, it works more or less correctly.
However, it’s strange that with the player used by Jellyfin, it doesn’t work.
