Add a custom tag to each channel, like "blockuser1" and "blockuser2". It doesn't have to be named that, but you get the idea.
Then go to Dashboard > Users > select a user > Parental Controls. Add this tag this "block user" tag to "Block items with tags". They should no longer see channels with that tag attached to it.
