Strange that you were able to connect at all without port forwarding. Which is why I started asking about CGNAT. It could be port publishing (Automatic port mapping in Jellyfin aka uPnP). Most routers timeout uPnP after a set amount of time, but that is usually like 60 minutes which is why I didn't suspect that initially.
