If you are only using this for Jellyfin, 16GB of RAM is fine. But since you going to add additional apps, you should get 32GB of RAM.
Any particular reason you are adding in the 2TB SATA SSD instead of a hard drive? There is no benefit to storing media on a SSD and it costs a lot more per TB. Only the OS and application disk needs to be a SSD.
You seem experienced and looking at your profile, i see you got a similar setup of what i'm planning to build. After doing some research I put together this https://pcpartpicker.com/list/LdyvDj part list for a budget friendly server that would handle jellyfin and maybe immich. most of my collection would be 1080p remux and some of my favorites would be 4k remux, the server should be able to handle at least one stream of transcode 4k to 1080p if needed. Do you see any problems with my proposed setup or any improvements? Also do you have any idea what would be the best way to add multiple hard drives? I would prefer my setup to be scalable. I'm planning to use Ubuntu Server LTS as OS and all my services in docker containers. Btw I live in Germany and would also need to figure out how to run {apps we don't talk about - TDP} stack securly behind mullvad, and having my other services not using the vpn. Else I will get {stuff we don't talk about - TDP} here haha.
