You can't filter by language tracks, specifically.  But you can add tags and filter by tags.

Is it possible to add TAGS directly in Sonarr/Radarr and use them in Jellyfin?

Hi, I wrote a plugin that adds language tags to movies, tv shows and collection based on the available audio tracks. This allows you to filter the library by language. You can also filter users selections via parental controls this way, essentially hiding content not available in the desired language.
