Hadn't touched Jellyfin for months, new items still getting unwanted tags, but recently I did find that a plugin (aniDB) had two check boxes for editing genres (which also update when i don't want them to but isn't a problem because there aren't hundreds of genres) but it did make me notice that some files have more really weird tags that suggest aniDB might be my problem. Like 'Aliens 3' has tags for coming of age, denpa, seinen, and school club; which are definitely more Japanese/asian/anime content tags than American live action movie tags.
Still on 10.9.9, might check the updates tomorrow.
The problem with fixes like the one you suggest is that if you go to filters, it still has a Tag menu that is populated with probably 100 tags. Before I did a complete refresh of my files and data and excluded tags, the filter list was endless. I can probably remove that with css too, but I and many other people would prefer an option to just exclude these things.
I would LOVE a 'Display' section in the Dashboard that (with simple check-boxes) lets you choose what info you see on a movie/shows page; so I can choose to not see rotten tomato stats, audio and video info, tags, genres, studios, production locations, external ID links, or whatever.
Jellyfins tagline says "you in control of your media." and "Your media, your server, your way." but it just seems more like 'your media, your server, whichever internet database you uses way.' User based customization and categorization is almost if not entirely one item at a time only.
