You can choose to run Jellyfin without metadata providers as each library lets you disable them all.
If you want a feature that ignores tags (or other metadata) upon an import from any metadata provider based on regex, you can submit a request here: https://features.jellyfin.org/
It doesn't guarantee that volunteers will work on it, but it does tell the community that someone wants this feature.
If that's too slow for you, you can always work on a PR to get this functionality within Jellyfin.
