When you look in /home/admin/Docker/Jellyfin/, do you see folders and files in there?
If you did switch from jellyfin/jellyfin to linuxserver/jellyfin, that would cause your prior install to "disappear" since the two images are not freely interchangeable. Linuxserver locates their config files different enough that migrating is difficult.
