If you used both images with the same data directory, they are hopelessly intermingled. If you don't have a backup it may be better to start fresh.
I don't have enough information to hypothesize why the original linuxserver install crashed/disappeared/etc. I'd need to see jellyfin and docker logs from the day(s) in question. I'm assuming those logs have already aged off.
