I was using this.
image: lscr.io/linuxserver/jellyfin:latest
This was the issue. Switching to jellyfin/jellyfin fixed the issue completely.

Thats what the 2nd to code blocks are in my previous post. Seems the linuxserver image does not have the necessary drivers.
