If you want a feature that ignores tags (or other metadata) upon an import from any metadata provider based on regex, you can submit a request here: https://features.jellyfin.org/
It doesn't guarantee that volunteers will work on it, but it does tell the community that someone wants this feature.
If that's too slow for you, you can always work on a PR to get this functionality within Jellyfin.
I do have all metadata disabled in my libraries, except for one where I add all new content to to get and make changes to metadata (mostly the images) before transferring them to their forever folder/library.
The problem I am having is after updates random tags appear. The first time it just added countries to every files tags, but later updates added more random tags; never a full list of tags to a file just one or two, most of them don't apply to the movie, the country tag applied to most if not all, and the random ones only happened to maybe 50 movies.
The problem occurs during/from updating Jellyfin, settings play no part. The feature I want is the ability to mass edit tags and genres, and it has been requested a lot already, including by me.
