I think I was able to solve my problem. After some investigation, I re-builded my docker container of Jellyfin from scratch. And after enabling external connections, automatic port-mapping and adding the IP-address of my reverse proxy all seems to work fine!
I am pretty sure it was a problem with the container itself because all those settings I did try before. I checked every setting twice but then I realized that I didn't see any external access in the logs itself. Now after re-building the container I see the external connections in the logs
