None of my client devices can find the server

'remote connections' in this instance refers to any machine that is not the server

if unchecked only the server itself would be able to access jellyfin (localhost/127.0.0.1)

yes, where you installed jellyfin and configured media is the 'server', the firesticks are the 'client'
