    I managed to solve it. Turns out it's the encoding.xml file that needs modifying and not `system.xml'.
    Adding this tag did the trick.

    Code:
    <EncoderAppPath>/path/to/jellyfin-ffmpeg/ffmpeg</EncoderAppPath>
