FYI, I "solved" this a few days ago by recreating the container. I only passed in /dev/dri/renderD128 and set the group permission to match the one required by Jellyfin (993).
I also went with VAAPI drives. All my 4K videos played smoothly. Sadly, today I had to restart the container to fix 4K playback though 480/1080P worked fine. So there does seem to be some flakiness in either the drivers/hardware or with Jellyfin itself.
At some point, I'll run Plex in a container to see if I can isolate. A bit sad since I otherwise enjoyed Jellyfin performance and it's UI.
