Have you tried unchecking all the image fetchers for you anime-movies library? That should hopefully stop them changing on there own by Jellyfin.
I see you turned off automatic metadata refresh and it seems to leave the titles in Ukrainian but it is still replacing the images.
since you are using .nfo files there is one other thing it could be though kind of a long shot, If you are using Radarr to manage your movies and it is set to save metadata it might be replacing the images when it does an automatic refresh like once a day. It seems to pull English posters even if you set it to save metadata in another language.
Does Jellyfin save the the Ukrainian poster images as the usual poster.jpg or is it saving it as a different word? If its saving as a different word Radarr would see the missing poster.jpg in the movie folder and re-download it when it does it's daily refresh.
