I don't really know what exactly worked - here is what I have done:

- Restarted everything
- Uninstall and reinsall Jellyfin
- I had a look at properties at the docker-folder
- I told the NAS, that I would throw him out of the window if Jellyfin wont work by end of the day
- waited 30 minutes and returned for a new try
