This is very similar to my specs and should be plenty. My Jellyfin is using the official TrueNAS app and took very little effort to see my Arc A380 and use it for transcoding. TrueNAS Community Edition is Linux based and like AMD, Intel provides kernel drivers built into Linux that require no installation. It's just Nvidia that doesn't like to play nice.
The A380 absolutely crushes 4K HDR and I hear the A310 isn't that much less powerful. I've personally only done it with one client at a time, but reports around the forum are that it can confidently handle several streams at once.
128GB NVME should be enough for a boot drive, Jellyfin and Minecraft server. You'll just have to do a little extra setup to make sure Jellyfin finds your movies on the HDD. The lack of redundancy does worry me a little bit, but if you're not storing irreplaceable personal data then it's probably okay.
