Replicate your issue with the metadata manager and then upload your log to pastebin or sourcebin. Redact any WAN IPs and usernames.
The only times Jellyfin has modified any metadata for manually identified media was when I told it to (replace all metadata scan type). I haven't experienced Jellyfin changing metadata unprompted. My Jellyfin install is pretty vanilla so keep in mind that 3rd party plugins might change that behavior.
Jellyfin is meant to be played with Jellyfin web or Jellyfin Media Player (and a couple other 3rd party clients). VLC does support DLNA, but DLNA sucks, is obsolete, was abandoned by the consortium that made it, and you shouldn't use it.
