I got this issue a 1-2 times in the beginning where my jellyfin docker was starting up before my "mounts" were available, not sure its the issue here but worth checking.  You can try turning off directory watching and just manually update when you get new media and see if that fixes it.

Thanks for that. I honestly didn't know about this option. I guess I'll see in early October if that helps.
