I've been doing some digging and I think I've narrowed this down to SELinux being enforced on the host.
If I set SELinux to 'permissive' then Jellyfin is able to see folders mounted in /etc/fstab.
But I'm still none the wiser as to why this doesn't work when I set SELinux back to 'enforced'.
SELinux is totally new to me, but it seems like a context needs to be set for the folders in order for the Jellyfin container to see them?
