I'm also pretty new to Jellyfin and was wondering the same thing. While I think I'll switch to Finamp going forward, I did some fiddling with the official Jellyfin iOS app first. In the OP, Peter says:

and this gave me a hunch to see if I could force MP3s (and other formats) to be transcoded server-side to MP4. At the very bottom of the app's Playback settings, I found two options "Always remux FLAC audio files" and "Always remux MP3 audio files". Turning those on seems, in basic testing, to allow playback to continue in the background even with the screen locked.
I suspect you might be able to make a similar workaround via the Jellyfin server settings for transcoding, but I haven't looked into that.
As an aside, I was surprised that I hadn't seen Finamp listed on https://jellyfin.org/downloads/clients/. Looking again just now, I realized that it *is*, but only once you switch from "Recommended" to "All". That "recommended" filter applied by default is not obvious!
