Didn't figure out what the issue was, but a full uninstall (flatpak uninstall --delete-data com.github.iwalton3.jellyfin-media-player) and reinstall seems to have fixed the issue. Given that the other PC I have set up (Windows11) didn't have any issues, I'm assuming something just got borked due to a Linux-related update.
