How do I fix the server version in Ubuntu Server?

How are you installing?

Did you try...(backup data first of course)
sudo apt-get install --reinstall jellyfin jellyfin-server jellyfin-web

Or are you using... curl https://repo.jellyfin.org/install-debuntu.sh | sudo bash
curl https://repo.jellyfin.org/install-debuntu.sh | sudo bash

Worst case..
apt -f install` forces a package install
