In the web admin interface, go to Dashboard -> Libraries -> Libraries, then click on the three vertical dots on your movie library/libraries and select 'Manage Library'. Scroll down, and make sure "Automatically add to collection" is NOT checked. Go to the 'Collections' library and select 'Manage Library' under the three vertical dots, and in there make sure "Automatically refresh metadata from the internet" is set to never.
Go to Dashboard -> Scheduled Tasks and scroll down to the bottom, 'TMDB' section. Click on 'Scan library for new box sets', and click the red circle on the right to remove the default 'Every 24 hours' schedule for this task.
That should limit automatic creation of collections while allowing you to create your own as needed.
