Update with a pattern that gets me to log in temporarily, but not really usable in the long run:
Force stop app
Clear storage and cache
Enter URL with port number 28920 and wait for failure
Entry URL with /jellyfin (the redirect I have from the main Apache server on my other machine) and wait for failure
Re-enter URL with port number 28920
This seems to work for a single session, for whatever reason, as long as I don't close/swipe away the app. I don't know if it's temporarily caching the main server's SSL certificate or what, but it never works again without clearing app data/cache first.
