I had this same issue on my google chromecast, which seems to be solved by swapping to my ONN 4K Plus. I can further verify it's not a corrupted file or larger size than my bandwidth allows, as I can watch the video through a remote network file browser. There is no subtitles for most of my library, so I dont think its a problem there either.
Providing the logs for someone smarter than me, I cant figure out how to read them for the life of me. Would still consider myself a beginner to self hosting in general, so apologies in advance if I've provided too little or wonky information. Ive followed offical and unnofical troubleshooting guides with no luck. The forum is really my last option as im about ready to throw my hat down.

Try lowering the Bitrate on your phones Jellyfin client to something like 15/Mbps and let the server transcode the video to the phone.
