I believe the "video" field here takes the "title" of the video stream, in your case the title of the video stream is 1080p VP9 SDR, so this makes sense.
This is probably intentional, as the Video field becomes a dropdown to select multiple versions, when they are present.
as for fixing it, I think editing the source file metadata for the video stream would be the best way.
