Just a follow up.
So I bought an NVIDIA Quadro P400 and put 192Go Ram, things are much better now.
Just be careful to get the good nvidia driver for the good version of jellyfin according to the OS.
To summarize, Jellyfin 10.10 needs ffmpeg 6 which is in nvidia driver 520 minimum but Ubuntu 20.04 accepts only nvidia 470 but you can force 535...
