i think it would be best for you to stay with an OS you are comfortable with using
i prefer linux so i use linux but if i were more comfortable on windows i believe jellyfin would work just as well there
but i have never used macos so for me to jump into macos and try to setup a server it would be a disaster
i do not recommend using TrueNAS or other such operating systems, if going that route it would be easier to setup a bare bones ubuntu or debian jellyfin server as they are officially supported and even have setup scripts https://jellyfin.org/docs/general/installation/linux
