Okay, after sometime I just installed windows 11 since Docker works without problems there and I installed ffmpeg as well, how do I use it exactly? Do I just convert all my video files to specific format with it or does it attach to jellyfin somehow? Sorry for the long delay in response.

Ok, I fixed it, turns out it was an audio format it didn't like (mp3). Don't know why it doesn't like it, I switch to AAC for the audio and I haven't had any problems since. I wanted to use FLAC but I get no audio with that for reason, I'll have to do further testing but I'm happy with my server and just wanted to post this in case anyone has this problem.
