On the home page, Is there a way to change the Continue Watching & NextUp to the Primary Image of the series/movie instead of the episode image/sieries thumb image?

In your client settings, go to the following:

Client Settings > Display > "Use episode images in 'Next Up' and 'Continue Watching' sections"

Turn that setting off to get what you want.

No because the bottom portrait view is meant for show/season/movie views.

Next up shows episodes and therefore needs the landscape view to show what episode is next.

The option from the client setting works because the backdrop image is also in a landscape format.
