Is there a separate FireTV App that can maybe be sideloaded or something.  I was just out at my son's and he runs Jellyfin App on his Roku and when viewing the movies they do not take up the entire screen like they do when using the FireTV App so you can actually see the movie background image.  are there others that can be loaded instead of just the standard one from the Amazon store?

I don’t know if Kodi is available on the FireTV but that is the only one that can probably be customized to do what you want.

Are you using the correct Jellyfin version? You should not use the normal Jellyfin version. It is not compatible with FireTV.
The version you need to use is called Jellyfin for Fire TV.

    This one: https://www.amazon.de/-/en/dp/B07TX7Z725
    Jellyfin: 10.10.7
