is there a way to keep the library folders clean ie without the metadata of the videos such as the nfo files, trickplay folder etc? i would prefer if my original folders were kept the way it was before i put them through to jellyfin.

is it possible to essentially separate the jellyfin-created files from my original media files while still having those functions enabled? i just find the current folder messy and troublesome if i were to have to copy the original files/folders

By default, Jellyfin does not create any files and folders in your media directories. All metadata and images are stored in Jellyfin's application directory.

There are three settings in the library config that write NFOs, images, and trickplays to your media folders. But those are off by default.

ah i understand. but if i want to have them enabled, there's no way to put those files in another space except for the root folders, right?

Correct. Your options are your media directories or Jellyfin's app directory and database.

This is currently not configurable beyond that and I am not aware of any efforts to make it configurable.

HOWEVER, if for disk space reasons you do need metadata located on a different location from Jellyfin and/or your media, you could use symlinks. And with Docker you can mount specific container directories at an arbitrary directory on the host.

Keep in mind that storing metadata in this way is not "portable" like it would be if you stored your metadata/images/trickplays alongside your media. If THIS is your intent, having "portable" metadata, don't bother with the symlink suggestion. Since Jellyfin uses a UUID string for storing the metadata and that UUID will likely not be the same if you did a full reinstall of Jellyfin and didn't do any kind of restoration of the database.
