How to update metadata with .nfo files?

Here's the issue:

1. I get the .nfo files for a show after I click the 'identify' button
2. I edit the .nfos directly with new information
3. I click 'refresh metadeta' in jellyfin and nothing happens

Am I doing this right? How can I override the metadata already in jellyfin with the .nfo files i create?

Does your nfo file xml follow the correct structure?
Maybe try comparing nfo file against known good example?
Did you give it time to update?
