Once the release is visible on GitHub we start the publishing part which often takes a few days for the stores to approve and then me gradually increasing rollout and watching for any major issues. Most patch releases (where only the last digit changes) get a full rollout, 0.18.3 was a "special" one that I explicitly postponed until after new year so no new major issues would arise for people using Jellyfin during their new years festivities.
That's smart thinking! The delayed rollout reduces work for both you and the users. Does Jellyfin publish any stats, like how many daily users there are, or do you just rely on download numbers? I'm curious about how many people use the app since I use it daily.
A quick search and I wasn't able to locate any more details on the release process. Maybe a blog post about the process sometime this year; that includes what information on what developers can see when feedback is left on the app store? I am not sure if you answered this on reddit once.
