I'm curious as to why Venson is saying old log files are still there when they aren't, is there a possible bug in the SynoCommunity build or am I just unlucky?
The scheduled task hasn't run for 2 days since I deleted the trigger yet it's still only storing the most recent 3 days. Where can I turn that off?

Venson actually already provided the correct answer here. It is the Clean Log Directory task that is cycling out older log files, and it is a user adjustable setting. You will find it in your scheduled tasks. By default, it runs every 24 hours.
If you adjust this, you can preserve logs for longer. You are also welcome to simply turn it off, if you don't want log rotation. Just remember that they will eventually fill your drive.
If something else is still removing the logs, it's not jellyfin.
