jellyfin-git likely targets master, which is what we refer to as "unstable". Very not recommended for general use. However it's worth noting that the Jellyfin team has no input into the arch packages. We don't publish them ourselves.
More likely, you don't want to use the aur at all. The server and web interface have been included in the official arch "Extras" repo, so you should just need to install from there. From a quick search, it looks like
