Currently my subtitles have a label like "English - SUBRIP - External", which may be descriptive but is also ugly and unintuitive. Is there a way to change the subtitles manually?
I have seen this bug report which shows some kind of subtitles metadata but I can't find where it is located and how to change it.

Most likely that label is pulled from Jellyfin's library database, library.db. If you're brave enough to dive into the DB to change it, stop jellyfin and backup your DB before making changes.
