Oh boy, so it seems like using a junction is sufficient to get going, however there are somehow still small weird things going on. Mainly, this weird error when I go to edit my libraries:
"The library is in an invalid state and cannot be edited. You are possibly encountering a bug: the path in the database is not the correct path on the filesystem."
All the directories the libraries point to are there on the new system as they were before...I don't know what's going on.
What directories do I need to copy from the old system to get things going? Just the jellyfin data in %localappdata%, or the Program Files directory too? Anything else I may be missing?

Somewhat painstakingly editing the databases and any other .xls or .js or meta files I found in the data directory to replace the user name in the directory seems to have done the trick! Now everything seems to run and look normally, and I'm not seeing any errors in the log
