FIX!
turns out it is not a mounting issue,
i did some digging in my files, turns out for some reason under
/media/<user>
there where two drives (with the same name), a drive im calling 'Ghost drive' and the real drive.
Jellyfin was taking media from the 'Ghost drive'
the 'ghost drive' had no media on it.
there was now way to delete the 'ghost drive' and always returned me with an error when i tried.
to fix i renamed my ssd, and used chmod 777.
i then added it as a new libary in jellyfin and deleted the old.
Why?
i believe it may be because i pulled the drive out while scanning, but whatever it is ill never know.
Outcome:
i now have a lot of 'filing' to do.
Thank you for you help @TheDreadPirate
