I use sort titles for nearly all of my collections, Harry Potter, Fast and Furious, Die Hard, etc. I keep running into an issue where I will move a file from one folder to another, and it causes me to lose one or all of my sort titles so I have to go back in one by one and change the metadata, is there a way to hard code the sort title into the metadata?

No. That metadata is written to the database and assigned to that instance of the show/movie. My understanding is that when you move it the movie/show gets a new ID in the database.
