But in the UI, I can only find the original. Why does Jellyfin want to hide stuff from me?

You're experiencing difficulties because you're using "part" in the filename, which is a keyword in Jellyfin to split episodes across multiple parts. Try renaming your files to something like "the-prisoner.2009.s01e01.mkv" and so on.
