I am trying to get Jellyfin to recognise the show "extras" but it just wont do it - Any ideas.

When I listed out all of the shows in the Jellyfin database it was the only one not listed.

Try naming the folder "Extras [tmdbid-2693]" and rescan.

I just moved Extras from Plex to Jellyfin, and just finished watching the 2 seasons and special with only one issue. (The Ross Kemp and Ben Stiller episodes were mixed up).

I set the series metadata to display DVD order and it resolved that.

TheTVDB is my primary metadata downloader for the show and the episodes.

Im using the below file/folder structure, Im not including the show name on the episodes, but I do include the start year on show name folder.

    Extras (2005)
       | --- Season 0
           | --- S00E01 The Special
       | --- Season 1
           | --- S01E01 Ross Kemp and Vinnie Jones
           | --- S01E02 Ben Stiller
       | --- Season 2
          | --- S02E02 David Bowie

Thanks for both those solutions - I'll give them a try
