Video plays on PC but not Roku

Jellyfin server is running on my unRAID machine.  I noticed the other night while re-binging Big Bang Theory, that on our TV, many of the shows would load the sound, but no video.  That's on a Roku Ultra, maybe 2022ish model.  Out of curiosity, I installed Jellyin on a Windows computer (the app, not web) and the shows in question played fine.

Can anyone point me in the right direction as to where to begin looking for an answer?  My gut response would be incompatible video stream, but isn't that what transcoding is for?

that would be my expectation as well, when playing on Roku provide a server log via public paste site (redact sensitive information)
and if present the corresponding ffmpeg* log
