I have a server (an old computer) in which I have Debian installed and have hosted Jellyfin in a docker container.
The server has an Intel Core i3-540 and a Nvidia GT-630. Based on the research I did I don't think I can use these for hardware acceleration, I just wanted to confirm this as I don't have much knowledge in this area. Also, will running in a container cause any performance drops?

The i3-540 doesn't have an iGPU and thus no Quick Sync. The GT630 doesn't have NVENC.

as to the other part of your question, no running in docker does not diminish performance (or if it does it's less than 1% and i've never noticed), it's not virtualized like a vm so uses normal processes and (if configured) physical hardware

Not all Nvidia GPUs have NVENC. NVENC was introduced with Kelper, but the GT630 was based on the previous generation Fermi architecture and did not have NVENC. Another exception is the GT 1030, which we specifically mention in our hardware selection guide.
